I love the AS steel in the Takeda's - they are scary sharp! But also a bit delicate! I have a Carter Kuro-Uchi Nakiri which is similarly razor sharp and gets a little more use.
I have admired some Mr Itto's in the past but don't own any unfortunately.
I had to "Google" Thomas Gerner - I would like to own a locally made knife at some stage. I haven't bought any knives for a while now - other interests have taken priority! But I still love a knife with a bit of soul!

Beautiful knives (Mert Tansu). I have quite a compact kitchen, so typically use 210mm, although my Takeda is a 240mm.Look up mert tansu for kitchen knives. I have a few of his.
