some stone you need to soak in water for sometime before they are usable. Some only need a splash of water and you are good to go

Typically how long did it take you to sharpen a knife with it from unpacking to sharpened and packed away?I've not used. I had an EdgeFaux but gave up because of the hassle. Now I use my electric one every month or so

So not the "I need to sharpen this and only this knife in a hurry" type, yet the set up and sharpen all of the houses knives enjoying a drink or two and some form of entertainment?The Edgefaux? Lots of fiddling around trying to get it set up on the bench. I’d say half an hour each time
Yeah, I have a couple of Japanese stones (3000 and 10000) that have been a part of my workshop since ~1990 (back when I was working as a blacksmith) which got used for anything needing a really fine edge, sometimes followed by a touch of the rubber buffing wheel with a polishing compound. I quickly learned to charge my customers a premium for this kind of treatment, mostly because of the time involved in just maintaining those stones. The stamps have worn away long ago.NiceI've noticed stones are a whole other rabbit hole to explore at a later date
